Healthy Cooking
Techniques that preserve nutrients, enhance flavors, and support long-term wellness through practical kitchen skills accessible to everyone.
What does healthy cooking actually mean?
Cooking methods determine whether nutrients survive the heat or disappear into steam. Steaming preserves vitamins that boiling washes away. Roasting concentrates flavors without adding processed fats.
Since 2017, Molpy Xardun has connected students across Ukraine through online sessions that teach practical techniques anyone can use at home. You choose between group classes for shared learning or individual sessions for focused skill development. Both formats give direct access to instructors who demonstrate methods in real time and answer questions as you cook.
Each session builds on what you already know. Beginners start with fundamental techniques like proper knife work and temperature control. More experienced cooks refine specific methods such as low-temperature roasting or enzyme-preserving fermentation. The platform adapts to your pace and skill level rather than forcing everyone through identical content.
Flexible Learning Structure
Group sessions create collaborative environments where students share discoveries and troubleshoot together. Individual lessons focus entirely on your specific questions and skill gaps.
Live Demonstration Format
Instructors cook alongside you during sessions, showing each step in real time. You see how ingredients respond to heat, when textures change, and where timing matters most.
Skill-Based Progression
Content adjusts based on demonstrated ability rather than fixed schedules. You move forward when techniques become consistent, not when arbitrary time periods expire.
How sessions work
Sessions happen online through video connection, eliminating travel time and geographical barriers. Students join from kitchens across Ukraine, each working with their own equipment and ingredients.
Group sessions typically include four to eight participants. Everyone follows the same recipe while instructors monitor multiple camera feeds, catching mistakes before they compound. Individual sessions give undivided attention to one student, allowing deeper exploration of challenging techniques or dietary restrictions that require customized approaches.
- You receive ingredient lists and equipment requirements three days before each session
- Sessions begin with technique overview and common mistake identification
- Active cooking phase with real-time guidance and problem-solving
- Tasting and evaluation phase where instructors assess results through visual feedback
- Questions and refinement discussion addressing specific challenges encountered

Building practical skills over time
Cooking skills develop through repetition and feedback, not passive watching. Each session gives opportunities to practice techniques while instructors observe your work and suggest adjustments.
Students typically need eight to twelve weeks to internalize core methods like proper sautéing temperature, accurate knife cuts, and timing for ingredient additions. More complex techniques such as emulsion stabilization or multi-stage roasting require additional practice sessions spread across several months. Progress depends on cooking frequency outside scheduled sessions.
